Whole Grain Bread Flour: Milled from high-protein (13-15%), high-gluten hard red and white wheat, grown in Washington. Available in three grinds:
Fine Grind – Whole grain (bran and germ) in small uniform pieces. Our best seller.
Medium Grind – Slightly coarser than the fine grind.
Stone Ground – Coarse texture with the bran and germ in larger pieces.
Whole Grain Pastry Flour: Milled extra fine from soft white wheat grown in Washington. Especially good for cakes, cookies, pancakes, and pie crusts.
Unbleached White Flour: Milled for us on roller mills by Wheatland Mills from organic hard and soft wheat (10% protein). A good all-purpose enriched white flour.
Whole Grain Pasta Flour: Milled from whole durum wheat. High-protein, low-gluten flour for ideal for pasta.
Rye Flour: Fine and coarse milled flour from whole grain rye. Use to make bread, muffins, and crackers.
Spelt Flour: An ancient type of wheat with a nutty flavor that can be substituted for whole wheat flour.
Barley Flour: Fine grind milled from whole barley. For a different flavor and texture, substitute some of the whole wheat flour in a recipe with barley flour.
Non-Gluten Flour and Meal
Rice Flour: Fine milled from short and medium grain brown rice. Slightly sweet, does not contain gluten, and a perfect alternative flour for baking.
Oat Flour: High protein flour for bread and pastry, does not contain gluten.
Buckwheat Flour: Milled from whole buckwheat (dark) or from buckwheat groats (light). Buckwheat is a seed, not a grain and has no gluten. Enjoy its hearty flavor in pancakes, flatbreads, and crackers.
Millet Flour: Milled from tiny seeds to produce a fine flour. For yeast breads, substitute up to 30% millet flour with wheat flour or use alone to make delicate pastry and baked goods. Millet does not contain gluten.
Corn Meal: Milled from yellow and blue corn - the yellow corn comes from the Walla Walla area, the cornmeal is unsifted and contains a wide range of particle sizes. Cornmeal is full flavored and great for cornbread and muffins, does not contain gluten.
Note: Fairhaven non-gluten flours are all milled in a facility that processes and packages wheat products.
